Yule Log (Bûche de Noël) Recipe
The Yule Log, or Bûche de Noël, is a traditional French dessert shaped like a log, often served during a gathering. This festive treat combines a light sponge cake rolled with creamy filling and decorated to resemble a woodland log. It’s perfect for impressing guests at holiday gatherings!
Ingredients
For the Sponge Cake
- 4 large eggs, separated
- 1/2 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
For the Filling
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
For the Chocolate Ganache
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
Instructions
1. Prepare the Sponge Cake
- Preheat your oven to 375°F (190°C) and line a 10×15-inch jelly roll pan with parchment paper.
- Beat egg yolks and sugar in a bowl until pale and fluffy.
- In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually fold this into the yolk mixture.
- Whip egg whites with cream of tartar until stiff peaks form. Gently fold them into the batter in thirds to maintain the airiness.
- Spread the batter evenly onto the prepared pan.
- Bake for 10-12 minutes, or until the cake springs back when lightly touched.
Pro Tip:
While the cake is baking, prepare a clean kitchen towel dusted with powdered sugar. This will prevent the cake from sticking during the rolling process.
2. Roll the Cake
- Remove the cake from the oven and immediately invert it onto the prepared towel.
- Peel off the parchment paper and, using the towel, gently roll the cake from the short side into a tight spiral. Let it cool completely rolled.
3. Make the Filling
- Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Carefully unroll the cooled cake and spread the filling evenly.
- Roll the cake back up without the towel and place it seam-side down on a serving platter.
4. Prepare the Ganache
- Heat the heavy cream until just simmering (do not boil) and pour it over the chocolate chips.
- Let sit for 2-3 minutes, then stir until smooth and glossy.
- Spread or pipe the ganache over the cake roll to resemble bark. Use a fork to create textured “woodgrain” patterns.
Pro Tip:
For a more realistic log appearance, dust with powdered sugar to mimic snow and garnish with meringue mushrooms or sprigs of rosemary.
Serving Suggestions
Slice the Yule Log into thin pieces and serve with a dollop of whipped cream or a side of fresh berries. Pair it with a warm drink like hot cocoa or spiced mulled to enhance the festive vibe.
Storage Instructions
The Yule Log can be stored in the refrigerator for up to 3 days. Cover it loosely with plastic wrap to maintain its texture and flavor.
