Ingredients

Instructions

  1. Prepare the Pickled Vegetables:
    • In a medium jar, combine daikon radish, carrots, cucumber, and jalapeño.
    • Add rice vinegar and water along with pinches of sugar and salt. Ensure the liquids cover the vegetables; add more vinegar or water if necessary.
    • Let the mixture chill for at least one hour or store it in the fridge for up to a week.
  2. Marinate the Tofu:
    • Drain the tofu and slice it into ½-inch thick slices. Pat dry with a towel to remove excess moisture.
    • In a small bowl, whisk together olive oil, tamari, lime juice and zest, garlic, ginger, and black pepper.
    • Place the tofu in a shallow dish and pour the marinade over it. Flip to coat fully and let it marinate for at least 15 minutes.
  3. Cook the Tofu:
    • Heat a non-stick skillet over medium-high heat. Add a little oil to the pan.
    • Cook the marinated tofu slices for several minutes on each side until they are golden brown and caramelized. Remove from heat.

    • Spread spicy mayo on both sides of each baguette half.
